College of Hospitality Management (CHM) extension coordinator Jessa Mae Amoy shared that the campus, through its CHM research and extension services, has developed alternative flour and patties from coconut byproducts, such as sprouts and pulp, as part of a zero-waste approach to coconut utilization.

She added that the initiative aims to promote and strengthen local delicacies, like Pan Bisaya (Salbaro) which heavily uses coconut as an ingredient, while enhancing the skills of SETWA members through training, expertise sharing, monitoring, and improved access to resources to support tourism development on Sipaway Island.

Tourism operations officer II Jennifer Paran, CHM program head Aladin Flores Jr., and campus extension coordinator Domric Panunciar witnessed the MOA signing. ||
