A sustainable dining initiative, launched in celebration of the Sustainable Gastronomy Day on June 18, Going Bananas is Arima Restaurant’s exciting initiative to showcase the potential of local and sustainable ingredients. By utilizing all parts of the banana plant, this menu minimizes waste and highlights the importance of responsible food sourcing.

• Tropical Heart Salad – A refreshing salad made with the thinnest part of the banana heart in rice vinegar and lime marinade, tossed with cucumber, fried shallots, crushed peanuts.

• Banana Wrapped Pork Pata – Aromatic banana leaves encasing succulent pork leg cooked slowly in cane vinegar and soy sauce with kadios
