With the theme “Fire & Fusion”, Manokan Country at SM City Bacolod is once again firing up the grills as the city prepares for the 2025 Bacolod Chicken Inasal Festival, a four-day celebration from May 21 to 24 that pays tribute to Bacolod’s most iconic culinary treasure.
The festival officially kicks off with a ceremonial grilling on May 21 at the Manokan grounds, led by city officials, the Manokan Country Vendors Association, and special guests. This symbolic event underscores the historic role of Manokan Country in popularizing chicken inasal and cementing its place in the city’s cultural and culinary identity.
“Without Manokan Country, there would be no chicken inasal festival to celebrate,” said Dee Sacro, president of the Manokan Country Vendors Association, and granddaughter of veteran vendor, the late Antonena Velez Bolonia. “Manokan is where it all began.”


The celebration spans three key sites: SM City Bacolod, Ayala Malls Capitol Central, and The Upper East by Megaworld, with the cultural heart remaining at Manokan, where all-week grilling of chicken inasal and other local dishes are expected to draw crowds of locals and tourists alike.
Councilor Celia Matea Flor, who chairs the Sangguniang Panlungsod Committee on Markets, said the city has maintained a P1.2-million budget for the event. Despite its limitations, organizers promise a more extravagant and inclusive festival, thanks to extensive sponsor support.
This year’s expanded lineup includes exciting events, like the longest grill fest, cooking competitions, grilling workshops, and showcases of sauces, dips, and spreads.
There will also be photo exhibits, top chef creations, concerts, and nightly entertainment at all major venues throughout the week featuring Bacolod’s finest local bands.


In addition to the food and entertainment, the festival will feature community-oriented events, such as a fun run and pet showcases, offering something for every member of the family.
The celebration culminates on May 24 with two major highlights: the Chicken Inasal Awards at SM City Bacolod, honoring culinary excellence, and the electrifying Chicken Inasal Dance Arena Competition at The Upper East, continuing the tradition of vibrant street dance and cultural pride.
With fire on the grills and fusion in the air, Bacolod once again celebrates what makes it unique — as the home of the original Chicken Inasal. ||
